STUFFED EGGPLANT DRY ” stuffed eggplant dry”

currant or raisin CHAMPAGNE

Ingredients:

Dried Eggplants.

1 large onion.

Sprockets.

Raisins (Maybe a variety called passes champagne).

Cinnamon.

Water.

Olive oil.

Salt.

Directions:

Hydrate eggplants, for that we put the kettle on and when it starts to boil remove from heat. We introduce the eggplant into the water and maintain a 10 within minutes. The pulled from the water, drain them and turn away.

We take 2 glasses of water and filled with rice, I wash and mix with the grated onion.

Now mix the pine nuts, raisins, sal, cinnamon and a drizzle of olive oil. Add to rice with onion and mix everything now.

Fill the eggplants with the mixture. We put in a pan to fire, cast 2 glasses of water we keep over low heat about 20 minutes and remove from heat. Let rest a bit and you are ready.

We serve and ready to eat, they are delicious.
