Soups are an important part of the diet in Turkey and legumes appear in many. There are plenty of soups, and the truth is they are delicious.
– 1/2 glass of water lentils.
– 1 courgette.
– 1 carrot.
– 1 potato.
– 1 onion.
– 3 tablespoons butter.
– 1 teaspoon salt.
– A pinch of black pepper.
– Scallions or chives for garnish.
Wash the lentils and put them in a pan.
Peel and cut the vegetables into small pieces no. These are added to the pan and we add 8 glasses of water and cook over medium heat. When the vegetables are soft, we crush everything in a blender. Now we add the butter, salt and pepper. Stir everything well and keep a few more minutes on fire.
This is the original recipe, but what I do sometimes is to put the butter in the pan and saute some chopped vegetables in it. Add the lentils and water and cook until they are the blanditas vegetables and then beat everything.
Serve on plates and we can garnish with chives or scallions finely chopped.
